Lentil salad with goats cheese & Irish Heather Honey

I decided to buy a jar.
On Bank Holiday Monday when making lunch I decided to try a lentil salad, inspired by The Doctor's Kitchen
but with my own twist I created this salad. With meals I always think, how can I add more nutrients to this dish?
In this instance I topped the salad with Fivemile Town Goats cheese
,
my toasted seeds
and drizzled it with the Irish Heather honey, it was delicious! Recipe below.
Ingredients
Serves 2 as a main or 4 as side dish
1 x Tin of puy lentils, washed and drained
1 Courgettes, peeled into ribbons (using a potato peeler)
1 Avocado, cut into large chunks (about 2cm)
Large handful of raw green beans or sugar snaps cut into pieces
2 Tbsp good quality extra virgin olive oil
Juice of one lemon
1 Small red chilli, de-seeded and finely chopped
2 Tbsp chopped herbs, eg basil & mint
120g goats cheese cubed
Plenty of salt and pepper
2 Tbsp toasted seeds
1 Tbsp Irish Heather Honey
Method
- Begin by preparing the lentils and putting them into a large mixing bowl.
- Prepare the courgettes, avocado and beans; set aside.
- To the lentils, add in the olive oil, lemon juice, chilli, mint and salt and pepper; give it all a really good mix. Taste and season.
- Next, add in the prepared veggies. Gently toss all the ingredients together, taking care not to squash the avocado.
- Top with goats cheese, toasted seeds and Irish Heather honey.
- Enjoy!
